COS’s name is an acronym of the founders’ surnames: Cilia, Occhipinti, and Strano. They are led by the visionary winemaker Giusto Occhipinti who has been a key figure in the renaissance of Sicilian wine. His winery, COS, founded in 1980, has been instrumental in elevating the region’s reputation. I don’t think you could possibly overstate how important COS is to Sicilian wine.
They have been pioneers in organic and biodynamic farming practices, prioritizing the health of the soil and the environment. They use indigenous yeasts for fermentation and age their wines in large clay amphorae, a traditional method that imparts a unique character to the wines.
COS is best known for its Cerasuolo di Vittoria, a red wine made from Nero d’Avola and Frappato. This is their bread and butter Red and in a year like 2021, it is a must-have for Italian Red lovers. It will dazzle with anything at a dinner table.
