There’s a reason that Jean-Georges’ Fulton, Daniel Boulud’s Bar Boulud, and the Oceans right near Gramercy Park all pour this wine by-the-glass. It consistently delights those who get their hands on it. There’s so much to love, with its incredible vibrancy that leads to a rich core with flinty tautness and sapid minerality. You get stone fruits with flowers and lemon meringue notes that unite with a persistent oyster-shell minerality and back-palate tang that is the epitome of this great estate.

The Fèvres have roots that date back to 1745. Back then, the fear of frost was so great that the family actually turned down a Grand Cru vineyard purchase because the 4km horse ride was too long to reach the fruit if a cold snap took place.

Nowadays, organic viticulture has reinvigorated the family’s slopes on the right bank of the Serein River, where rabbits, deer, boar, and birds flit out from hedgerows that frame vines her forebears planted in Jurassic limestone.

The family owns some of the best premier cru vineyards in the area, and have for generations. Between Fourchaume and their 1er cru plot in Vaulorent, the Fèvre are treated to some of the best Chardonnay in all of Chablis. Savvy moves and a few strokes of good fortune have endowed them with 50 hectares sprinkled around the Serein’s right bank.
